Oolong Tea
"Dark dragons" - that's what oolong teas are called in Chinese. Although the origin of the name is unclear, it does not mean that oolong teas are all heavily oxidized. After all, with their spectrum of flavors ranging from sweet, floral, and fruity to complex bitter notes - and oxidation levels between black and green tea - the group of oolong teas is almost as versatile as their mythical namesakes.
